Bagel French Toast

               Bagel French Toast
                   
          

 Ingredients;             


             1. 2 plain bagels, sliced into thirds horizontally,


2.   1/4 cup of milk,

3. 2 large eggs,        

                    4. 1/2 tablespoon of                  cinnamon, 

                5.    1/4 tablespoon ground nutmeg,

            6. 1 tablespoon of butter.



Directions;            


1. In a shallow dish, beat the eggs, spices and milk.


2. Place the bagel slices into the mixture to soak for about 1/2 hour.


3. Turn the bagels once to cover both sides.


4. Melt the butter in a large skillet.


5. Fry the bagel slices on both sides until golden.


6.  Serve immediately with maple syrup and crispy bacon.


7.  Enjoy your delicious Bagel French Toast.
                 

Curried Butternut Soup

     Curried Butternut Soup
               
 

Ingredients;

1. 1 teaspoon of light oil (5ml) with a dash of toasted sesame oil,


2. 1/2 onion, peeled and coarsely chopped,


3. 1 tablespoon of curry powder(15 ml),

4. 1 apple, peeled, cored, and sliced thinly,


5. 2 cups of cooked butternut squash (472ml),

6. 2 cups of low_sodium chicken or vegetable broth(472ml),

7. 1/4 teaspoon of salt(1.25ml).



Instructions;


1. Heat the oil in a saucepan over medium heat and cook the onion and curry powder for 5 minutes.


2. Add the apple and cook for 5 minutes.

3. Add the squash, broth, and salt, bring to a boil, reduce the heat, cover, and simmer for 30 minutes.


4. Puree the soup in a food processor or blender and serve hot.
