Honey Cake

                          Honey Cake
                     




Ingredients:




1.  1 cup of sugar,




2. 1 cup of honey,



3. 1/2 cup of vegetable oil,



4. 4 eggs,




5. 1 tablespoon of shredded lemon peel,




6. 3 tablespoons of lemon juice,




7. 2 tablespoons of brandy,





8. 3, 1/2 cups of all purpose flour,




9. 1, 1/2 teaspoon of baking powder,




10. 1 teaspoon of baking soda,




11. 1/2 teaspoon of salt,





12. 1 teaspoon of ground cinnamon,




13. 1/2  teaspoon of ginger,



14. 1/4 teaspoon of ground nutmeg,



15. 2 teaspoons of instant coffee,




16. 2/3 cup of cold water,



17. 3/4 cup of chopped nuts,



18. 1/2 cups of raisins.





Instructions;





1.  Beat sugar, honey, oil, eggs, lemon peel and juice and brandy in a large mixer bowl for 2 minutes.




2. Stir in flour, baking powder, baking soda, salt, instant coffee alternatively with eater.




3. Beat on high speed, scrapping bowl occasionally for 2 minutes.




4. Fold in 1/2 cup of the raisins and nuts.




5. Pour into greased tube pan.




6. Bake until wooden stick inserted in centre comes out clean, about 1 hour.



7. Let cool for 15 minutes, remove from the pan, prick top of cake carefully with fork.



8. Drizzle with lemon sugar, sprinkle with remaining nuts.



9. Your Yammy Honey Cake is ready to be serve.

Coconut Cookies

Ingredients:




1. 2, 1/2 cups of flour,



2. 1 teas teaspoon of baking powder,




3. 1 teaspoon of soda,




4. 1/2 cup granulated sugar,




5. 1/2 cup of brown sugar,





6.  1 cup of butter,




7. 2 eggs,



8.  2 teaspoons of vanilla,



9. 1 uncooked oats,




10.  2 cups of coconut flaked.







Directions:




1. Combine flour, baking powder, soda and salt in a bowl.



2. Add granulated sugar, brown sugar, butter, eggs and vanilla: beat until smooth.





3. Stir oats and coconut.




4. Shape to form one inch cookies and arrange the cookies on greased cooking sheets.






5. Bake in preheated oven 18 degrees for 15_ 20 minutes.




6. Serve with a sift drink , like: pineapple juices, Orange, Pawpaw juice see recipe on how to make them on this blog site.

How are you all doing?
Happy Easter celebration to all my Christian viewers.


Today recipe is pancakes

Ingredients:



1. 1/2 cup of all_purpose flour,



2. 1/2 teaspoon of baking powder,



3. 1 teaspoon of salt,




4. 1 teaspoon of white sugar,




5. 1 egg,(depending on  the  quantity you want to make),



6. 3 teaspoons of butter, melted,




7. 1, 1/4 cups of milk,




Instructions:




1. In a large bowl, sift together the flour, baking powder, salt and sugar.



2. Make a well in the centre and pour the milk, egg and melted butter; mix until is smooth.



3. Heat a lightly oiled griddled or frying pan over medium high heat.




4. Pour or scoop the butter into the griddle, using approximately 1/4 cup for each pancake.




 5. When is turns brown on both sides, then your pancakes is ready.
Serve when hot.
