Ingredients;
1. 1 lb firm tofu, mashed,
2. 1 cup of vegetables of your choice (Mushrooms, onions, tomatoes, Broccoli e.t.c) sliced and diced,
3. 1 tablespoon of onion powder,
4. 1/8 tablespoon of Turmeric,
5. 1/2 tablespoon of salt.
Instructions:
1. Heat oil in a skillet and stir_fry the tofu for a few minutes, add the remaining ingredients and stir well.
2. Cook for a further 6_7 minutes until vegetables are tender.
3. This make a great vegan alternate to egg scramble.
4. You can serve over Toast Bread like mine.
