Mango And Black Bean Salsa

     Mango and black bean salsa
               


Ingredients:

1. 1 medium ripe mango (gives slightly to the touch),

2. 15 ounces (425 gm) canned low_ sodium cooked black bean, drained and well rinsed,

3. 2 green onions, coarsely chopped,

4.  1/4 teaspoon crushed red pepper (1.25ml),

5. 1 garlic clove, bashed, peeled, and chopped,
6. 1 Avocado pited diced (optional),

7. 1/4 teaspoon salt (1.25ml).

Direction:

1. Prepare the mango: Slice off the steam end and cut away the skin.

2. Trim the flesh away from the large seed and dice as evenly and neatly as possible, about the same size as the black beans.

3. Add the rest of the ingredients to the mango, mix well, and let the flavors marinate for 30 minutes before serving.

4. Enjoy your mango and black bean salsa.
